malting barley (spring barley)
Top quality malting barley of high nutritional value is the basis. During the malting process (germination and kilning), the starch is saccharified by the enzymes to maltoses which react with the amino acids (Maillard reaction [m.04]) to shape the famous tart-aromatic malty taste profile and the typical brown color shade.
The solubles are then isolated from the spelt grains and concentrated by mild evaporation to yield malt extract.
